Blanc Assemblage

Chavost's entry-level cuvée from Chavot-Courcourt, just south of Épernay: half white grapes, half black. Spontaneous fermentation, full malolactic, unfined, unfiltered and no added sulphites. Brut nature, so zero dosage.

Fresh and juicy, with orchard fruit and a hint of citrus. Give it some time in the glass and marzipan notes appear. Better in a wine glass than a flute.
