Chenin planted in 2012 on the clay-limestone slopes of Panzoult, picked early to lock in natural acidity. Direct-pressed, fermented cool, then a second fermentation in bottle and time on lattes to refine the bubble. Brut, chiselled and mineral — a traditional-method sparkler at a price that makes no sense.
